Why the Indonesian Vanilla
Indonesian vanilla, primarily the Planifolia variety, is renowned for its rich, smoky, and creamy flavor profile, making it the world's second-largest producer after Madagascar. Its unique characteristics are shaped by the country's fertile volcanic soils, tropical climate and traditional hand-pollination techniques. This uniqueness is set by the following things :
High vanillin content: Indonesian vanilla typically contains 2–3.5% vanillin, contributing to its strong, full-bodied flavor.
Bold, smoky aroma: Many beans have an earthy or smoky character due to the drying methods used in some regions.
Thick, oily pods: This indicates freshness and high moisture, ideal for long-term storage or extraction.
In terms of cultivation, planofolia beans are only picked when ripe and processed using the farmers’ know-how. Processing steps include picking and selecting the pods, washing, sorting by size, withering or wilting, curing, drying in the sun and using bamboo racks, indoors storage for 30-45 days, sorting and grading, and finally storage and packaging.
